Fresh milk is a food ingredient from milk-producing livestock that contains many nutrients. Nutrition content in milk, making milk can be a growth medium for bacterial microorganisms that can be a caused of decreased in quality and food safety and can caused undesirable damaged. Groups of bacteria that can contaminated milk include coliform bacteria such as Escherichia coli. The purposed of this studied was to determine the contamination of Escherichia coli bacteria in fresh milk samples before and after boiled at a temperature of 95ᵒC for 15 seconds. The studied was conducted in a descriptive pre-experimental with the Most Probable Number (MPN) test. The results obtained were 6 samples before boiling positive contaminated by coliform in the three test step, presumptive test, confirmatory test of 110 x 102 and complement test of 5 of 6 positive samples of Escherichia coli. Milk samples after boiled 6 sampels negative coliform contamination in the presumtive test. Boiling at 95ᵒC 15 second determines against Escherichia coli while the cell will be more easily damage which caused structural and functional damaged, allows boiled to be an alternative food safety before consumption.
