Salmonella sp. is a bacterium that causes salmonellosis whose habitat is in the digestive tract of animals and humans which often contaminate foods or drinks that contain high protein such as milk, while one of its processing is boiling. Boiling is a method used by the community to maintain milk reserves so they are not damaged. Salmonella sp in fresh cow's milk without boiling, after boiling for 10 and 20 seconds in Pujon District Malang Regency. The study population was 13 breeders. The sample used was 6 fresh cow's milk. The technique used is Simple Random Sampling. The method used is MPN (Most Probable Number). Analysis of the data used consists of frequency tabulation. The results of the study without boiling showed half positive (50%) and after boiling 10 and 20 seconds showed negative overall results (100%) of Salmonella sp. The conclusion is processing milk in a longer, shorter time is effective enough to reduce the number of bacteria. It is necessary for further research to be carried out research with more specific methods such as gram staining and biochemical tests to get more accurate results and are expected to produce SOP (Standard Operating Procedures) a good milking method.
