Formalin is a chemical that is often used to preserve food. The case of the use of formalin in salted fish and other food products shows the lack of public knowledge about the benefits and dangers of formalin. Formalin is not permitted in food or drink, because it is very dangerous for health. Short-term (acute) danger if swallowed, i.e. sick, nausea, vomiting and diarrhea. Long-term (chronic) danger if swallowed can cause irritation of the respiratory tract, vomiting and dizziness. The safe threshold in the body is 1 milligram per liter. While formaldehyde that may enter the body in the form of food for adults is 1.5 mg to 14 mg per day. This study aims to determine the formaldehyde content of cork salted fish sold at Pasar Besar Kota Malang. This type of research is descriptive. The study population was all cork salted fish with a total sample of 18 salted fish. Purposive sampling technique. The inspection method used is spectrophotometry using two tests, qualitative and quantitative. The results obtained (38.9%) positive salted fish samples containing formaldehyde and (61.1%) samples did not contain formaldehyde. The conclusion that can be drawn based on the research that has been done is that salted cork fish sold in large markets in Malang City is not safe for consumption because it contains formalin. Suggestions can be used as further research, especially in other types of salted fish.
