Crackers are one type of food made from ingredients that contain high enough starch and foods that are widely known by the public. Besides being cheap and easy to get, there are still many crackers that contain borax, one of which is the uyel cracker. Some cracker manufacturers add borax to the production process with the aim of increasing the crispness and taste of the product. This study aims to determine the presence or absence of borax and to determine the level of borax in cracker samples found in the traditional market of Blimbing Malang City. This research is a curcumin paper descriptive study and UV-Vis spectrophotometry with accidental sampling technique. The sample used in this study was 5 sample uyel crackers. The results showed that the raw uyel cracker samples examined for borax and borax levels were entirely positive containing borax with the highest levels of 1.0915 mg / ml and the lowest levels of 0.4163 mg / ml. The minimum limit if borax consumption in children is equal to 0.1-0.5 mg / ml, whereas for adults 2.5-10 mg / ml. The danger of borax if consumed in doses ranging from 0.1 to 2.5 mg / ml continuously will result in high toxicity to the body including symptoms that appear are fever, vomiting, headache, coughing, diarrhea. When consuming borax with high doses the same symptoms but more fatal because of the cumulative cumulative will accumulate little by little in the body. Suggestions from the public and the seller can do a borax examination independently by using curcumin paper.
